The full day class covers 7 dishes compared to 4 or 5 in the half day session, runs for approximately 6 to 7 hours, and goes deeper into Northern Thai and Lanna cuisine. It introduces more advanced techniques including charcoal cooking and the preparation of Khao Soi curry paste. It is the right choice if you want a thorough, immersive experience rather than a taster session.
No prior cooking experience is required. While the full day course does cover more dishes and techniques than the half day class, your instructor will walk you through every step clearly and patiently. That said, guests who enjoy cooking and want to deepen their knowledge tend to find this course especially satisfying.
Khao Soi is a rich coconut curry noodle soup that is widely considered the signature dish of Chiang Mai. It has a deep, layered flavor built from handmade curry paste and slow-cooked coconut broth. It features regularly in our full day Thai food course because it is one of the finest examples of what makes Lanna cuisine so unique and beloved.

Many of our guests say the market tour is one of the highlights of the whole experience. Visiting the local fresh market before the class begins gives you a direct connection to the ingredients you will be cooking with later in the day. Your instructor will be with you to explain what everything is and how it is used in Thai cooking. We highly recommend it if your schedule allows.
